Super Easy Quinoa and Kale Salad

Today I'm sharing my favorite simple go-to quinoa and kale salad. I love this recipe because it's quick, easy and nutritious. It can be a delicious side dish or a meal on its own. The best part it only needs three ingredients - quinoa, kale and garlic, plus salt and pepper.... This salad is ready practically in no time and can be served warm or cold.


On a side note I love how this photo turned out. I used two black poster boards for the background but after editing, simple black transformed into a warm grey-sh bluish color. Ha!


I've been really enjoying experimenting with food photography since the Corona virus started. Food styling has been a lot of fun as well. Still I miss getting outside and shooting outdoors. Even though things are getting better on Long Island, I feel anxious about leaving my home all the same.


Food photography has been a great destruction during these hard times. It takes my mind off the terrible .things that are happening in our country on a daily basis. I literally stopped watching the news it's so heartbreaking and overwhelming. It's difficult being an empath during these troubling times.


Anyway, here's my quinoa and kale salad recipe.


Ingredients:

  • 1 cup quinoa

  • 1 bunch kale

  • 5 garlic cloves, chopped

  • tablespoon olive oil

  • salt and pepper to taste

Instructions:

  • Cook quinoa until soft.

  • Saute garlic in olive oil.

  • Add kale to the pen and cook uncovered for about 10 minutes, stirring frequently.

  • Combine quinoa and kale. Mix well.

  • Add salt and pepper to state.

  • Serve warm or cold.
